I think holy orders (and other theocracies) will probably never be playable entities in CK3. The developers have repeatedly stated that dynastic continuity is critical to the whole game system, so anything where you would need to play as a character of a different dynasty upon death is not going to happen.A barony would have sufficed. But yes they appear in their own tab next to mercenaries and you can hire them for free since you are their patron. They will only help you against infidels tho. They also sometimes ask for more land (a random city or barony holding in your entire realm) in exchange for 750gold and opinion boosts.
